Candy canes and stockings are Christmas essentials! In this video I show you how to make adorable cookies with crushed peppermint stuffing. Decorated with simple white icing and a few pretty sprinkles, these cookies will make a festive, delicious addition to any Christmas celebration.

Peppermint Butter Spritz
1 cup (2 sticks) butter, softened (not melted)
1/2 cup plus 1 tablespoon powdered sugar
2 teaspoons peppermint extract
1 teaspoon vanilla extract
2 cups plus 3 tablespoons all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
Peppermint Sandwich Cookie Filling
4 Tablespoons shortening
4 Tablespoons butter
1 3/4 cups powdered sugar- add more or less to get a good thickness
1/2 teaspoon peppermint extract
2 Tablespoons Wilton® Peppermint Crunch Sprinkles or similar crushed peppermint
Combine the flour, salt, and baking soda and set aside. Cream the butter very well with an electric mixer on its highest setting. Then add the powdered sugar and cream again until light and fluffy. Add the vanilla and mint extracts and mix thoroughly. Add the flour mixture and mix until all ingredients are evenly combined, but do not over-mix as that can make spritz dough too stiff.
You can always troubleshoot a spritz dough by adding water or vanilla extract a teaspoon at a time to stiff, dry dough, or adding flour a tablespoon at a time to overly sticky or soft dough. Perfect spritz dough has a soft malleable texture that is not too sticky or too stiff.
Tip: I find that the recipes with powdered sugar tend to have more issues with being too dry- especially in winter when it’s sooo dry in the house! Don’t be alarmed if you need to add a full tablespoon of vanilla (and maybe even a little mint if you want it mintier) to get the texture right in dry conditions. It’ll just give a richer flavor so it’s all good. 😉

Press with the candy cane and stocking disks using a cookie press onto un-greased cookie sheets.
Try to keep the shapes on the skinny side, as they will spread a bit in baking!
To make sandwich cookies, make sure that you press your shapes in both directions. Flip your disk over and press an even amount of shapes facing each direction so they will fit back-to-back when you sandwich the filling between them.
Add decors, sprinkles, nonpareils, etc before baking so they set into the dough. If you forget or prefer, use a dab of icing to hold them in place after baking.
Bake in a 400 degree oven for 6 to 10 minutes. Check early and often as spritz cookies brown quickly. Let sit 2 or 3 minutes and move to cooking rack. Makes about 70 cookies/35 sandwiches.
Make the filling. Combine all ingredients except the peppermint sprinkles. Mix until you have a stiff cookie stuffing.
Add the sprinkles.
After baking sort your shapes by matched-sized pairs, then use a knife or a large round decorating tip to apply the filling to the bottom cookie. Gently press on the top cookie and finish decorating.
Use white icing and a round decorating tip to make stripes on the candy canes, and a star tip to make the fur on the stocking tops.
