I promised new disk sets last winter and I am SO proud of these new shapes! They’re shown above decorated quite fancy (click to enlarge image), but the truth is they are just as cute in plain no-decorate recipes. To showcase that and give you some simple options, I created some brand NEW cookie and cracker recipes! Read on to see! I also tell you how to get the look you see above for each set. 🙂

The New Sets & Recipes

I’m keeping this post as basic as I can with all these new sets and recipes. If you’ve been with Impress for years, you know the ins & outs of cookie pressing. If you’re new, I suggest reading some of the other recipe posts here that have in-depth instructions. I suggest reading the Carrot Cake Easter Spritz Cookies Post from March 2022. **These new recipes are simple variations on recipes already here on the blog.**

I’m going to list them off and direct you to the previous recipe post, with any tips or ingredient changes! That way you have full directions without all the duplication.

Camping, Hiking, and Outdoors

I am so excited about this one as I am an avid hiker and outdoorsy person! I made a flavor-packed granola spritz cookie recipe for this set! You will not believe how good these are! They truly taste like granola.

To get the fancy decorated look in the top photo: Color some plain spritz cookie dough green, tan, and turquoise as a base color and bake your shapes. Then paint with EDIBLE pearl dust or matte petal dust for accent colors. I painted the fire and marshmallow & stick on a plain cookie.

The New Granola Spritz Cookie recipe:

Use my Vanilla-Honey Spritz recipe and add 1 cup of finely ground granola. I used Bear Naked brand’s Triple Berry Granola and the combo of oats and freeze dried berries made a light, intensely granola-and-berry flavored cookie. These are AMAZING!

Use a food processor/blender/magic bullet type appliance to make the granola VERY finely ground. The pieces must be small enough to pass through the shape holes, so pull out any pieces that are too big.

Add the cup of ground granola to the dough at the end. If your disks get clogged by any granola pieces that are too big, remove the disk, fish out the large chunk that’s blocking dough passage, re-attach the disk and keep going!

Bake till the edges just begin to brown. Cover tightly when storing.

Woodland Two

Our original Woodland disk set is extremely popular! I decided that our woodland buddies would be adorable with some more friends. I baked these in my chai spice recipe since I’ve already blogged that with the original Woodland set.

To get the fancy decorated look in the top photo: Color some plain spritz cookie dough green for frog, tan for the brown animals, then paint with EDIBLE pearl dust or matte petal dust for accent colors. I painted the cute mushroom and 6 petal flower on a plain cookie.

Veggies

Have you seen the hilarious trend of coming to a party with a “veggie tray” full of cookies instead of veggies? Too funny, and we had to join the fun. Whether you’re celebrating a love of veggies or you’d rather have a tray of cookies, these are for you! Bake them as cookies or I made a fabulous ranch seasoned cheese cracker recipe. I plopped 4 veggie shaped crackers: a carrot, 2 tomatoes, and a radish, in a bowl of tomato soup and they are super cute!

To get the fancy decorated look in the top photo: Color some plain spritz cookie dough green for the broccoli, pea pod and celery, yellow for the corn, red for the tomato and radish, orange for the carrot, leaving the mushroom and garlic plain. Then paint with EDIBLE pearl dust or matte petal dust for veggie leaves, whites & tan on garlic and mushroom.

For the Ranch Veggies crackers: These crackers are a tiny variation on my 2014 recipe Rubbed Sage Holiday “Stuffing” Crackers. Make the cracker recipe as shown in that post, except add 2 tablespoons of Ranch Seasoning mix (I used Hidden Valley Ranch brand “seasoning mix”, not dip mix) instead of the sage, onion, and celery in the original recipe. TIPS: I suggest using a smaller cookie sheet for the crackers. They bake longer than cookies to begin with, but mine took significantly longer when using my large sheets than the smaller ones. That’s it! No other changes.

Fruits

We couldn’t do veggies and not do fruits! I made a sweet, fruity variation spritz cookie recipe for this set.

To get the fancy decorated look in the top photo: Color some plain spritz cookie dough yellow, orange, red, and whatever color you want your grapes, as a base color, then paint with EDIBLE pearl dust or matte petal dust for stems & leaves.

The New Fruity Spritz Cookie recipe:

To this dough add about 1 cup (measured once pulverized) of freeze-dried fruits! Honestly pick any one or 2 or 6 you like. I tried a bunch of combinations and they were all good. Just a nice, fruity sweetness comes through. In the cookies shown in the photo I blended pulverized toasted coconut chips, raspberries, strawberries, bananas, and peaches. Great blend! Use a food processor/blender/magic bullet type appliance to make the fruits VERY finely ground, almost the consistency of powder.

Bake till the edges just begin to brown. Cover tightly when storing.

Birds

Little-known to my cookie fans, I am also a nature/wildlife photographer, and one of my favorite subjects is birds. The designs for several of these shapes were inspired by my own photos. I used my kids’ favorite spritz cookie recipe, lemon poppy seed, to showcase un-decorated birds. First time I’ve blogged this recipe!

To get the fancy decorated look in the top photo: Color some plain spritz cookie dough green for the hummingbird, red for cardinal and robin, then paint with EDIBLE pearl dust or matte petal dust for accent colors. I painted the others on a plain cookie.

The New Lemon Poppy Seed Cookie recipe:

Use my Very Vanilla Butter Spritz recipe as shown in my Christmas Puppies recipe post:

To this dough add 1 Tablespoon of poppy seeds and replace the 1 tablespoon of vanilla extract with 1/2 tablespoon of lemon extract plus 1/2 tablespoon of vanilla extract. If you want it super lemony you can replace all the vanilla with a full tablespoon of lemon!

Space

When we first launched Impress! Bakeware in 2014 we had an outer space set. It was retired when we re-opened in 2019 as it wasn’t quite as good as we had hoped. I listened to people’s comments over the years and reimagined the set, adding 5 new shapes, giving the remaining 3 a retouch, and giving the set a whole new look. Both my and (my business partner/sister-in-law) Jill’s daughters majored/minored in Astronomy in college so we are all huge space fans! For this fun set I made colorful confetti spritz cookies.

To get the fancy decorated look in the top photo: Color some plain spritz cookie dough green for the alien ship and alien, blue for the galaxy and rocket, and orange (or whatever base color you like) for Saturn then paint with EDIBLE pearl dust or matte petal dust for accent colors. I painted the others on a plain cookie. The yellow on the rocket can be a little tricky to paint over a blue cookie, so you can always just paint the whole rocket on a plain cookie.

For the Space Confetti Spritz recipe: Add a few tablespoons or more (depending on how many specks of color you want!) of colorful nonpareils to any plain dough. I Used the Very Vanilla Butter Cookies recipe from the Christmas Puppies post. My Happy New Year 2021! post used a cream cheese recipe with confetti. You could use either one!

Southwest

Another set we originally launched with in 2014 and retired in 2019. I also re-imagined this set with the addition of the roadrunner (perhaps my new favorite shape! They turned out so dang cute.) and the chili pepper. I gave the rest a retouch and gave the whole set an updated look and a new taco seasoning cheese cracker recipe.

To get the fancy decorated look in the top photo: Color some plain spritz cookie dough green for the cactus, brown for the roadrunner, coyote, and rattlesnake, and red for the chili pepper. Then paint with EDIBLE pearl dust or matte petal dust for accent colors. I painted the kokopelli and southwest design on a plain cookie.

For the Taco Seasoning Southwest Cheese crackers: These crackers are a tiny variation on my 2014 recipe Rubbed Sage Holiday “Stuffing” Crackers. Make the cracker recipe as shown in that post, except add 1 to 2 tablespoons of Taco Seasoning mix instead of the sage, onion, and celery in the original recipe. TIPS: I suggest using a smaller cookie sheet for the crackers. They bake longer than cookies to begin with, but mine took significantly longer when using my large sheets than the smaller ones. That’s it! No other changes.

Leaves & Trees

This set has been transformed before. When we retired Southwest in 2019 we added the cacti to leaves because they were popular. Now that Southwest is back the cacti have gone back to Southwest, and I added 2 new leaves in their place! Sage and ash leaves. I did not do a new recipe for these as the change was minimal. I already have a wonderful recipe post from 2016 with video that shows how to make multicolor fall leaves!

IMPORTANT NOTES IF YOU HAVE ANY DISK DUPLICATION ISSUES! Read on!

We realize that the cacti moved back to Southwest after spending a few years in the Leaves disk set. If you are wanting the 2 new leaves (sage and ash) we made a limited stock for people who already have the rest of the set.
